The growth and phase behaviour of monohydroxy fatty acids [MHFAs] (i.e. methyl esters of fatty acids, glycerides and alcohols) have been studied in contact with hydroxyapatite (HAp) both in the solid state and in solution. We have chosen these substances for their similarity to fatty acids (e.g. CH3COOH, C2H5OH, C3H7OH, C4H9OH) both in structure and polarities. The phase diagrams, which comprise the aqueous and the solid phase, have been drawn for a series of mixtures of HFAs with varying concentrations. The lines of demixing have been drawn in the solid/liquid and liquid/liquid regions. The structures of the solid phases have been characterized by FTIR and Raman spectroscopy, X-ray diffraction and differential scanning calorimetry (DSC). The solutions have been characterized for the entire temperature and concentration ranges by FTIR and Raman spectroscopy, dilatometry, DSC and isothermal calorimetry. The conclusions are as follows: 1) The phases with the highest stability are the phases I and IV. 2) The HFAs form two series of liquid phases, of which one is stable and the other one is metastable. The compositions of the liquid phases are very similar to those of the corresponding fatty acids. 3) The HFAs form a series of crystalline solids (hexagonal and monoclinic), of which the two most stable are those composed of lower-molecular-weight HFAs and those composed of higher-molecular-weight HFAs. The most stable crystalline phases are HAp-II and HAp-III, while the most metastable are HAp-I and HAp-IV, corresponding to that of the HFAs, and HAp-II, corresponding to that of the 1:1 mixtures of HFAs/
